In this session, we’ll focus on sauvignon blanc—herbal, citrusy, grassy, fruity, crisp—embraced around the world as the go-to wine to start an evening gathering yet also as a much-celebrated food wine, thanks to the grape’s potential to create wines with weight and intense flavors. We’ll also delve into the refreshing, expressive, and versatile Riesling, much underappreciated over the decades yet the darling of so many wine lovers. It will win you over, too, with its exceptional ability to pair with a variety of foods, as well as its incredible ability to strike the perfect balance between sweetness and acidity.
For our reds, we’ll explore the dark and tannic cabernet sauvignon, celebrated for its range of herbal and floral notes and its savory flavors, creating intense, layered, complex wines. The evening’s other red will be merlot, often thought of as falling somewhere between pinot noir and cabernet sauvignon, but which reveals its own distinct charms through its juicy red fruit notes, its smooth, silky tannins, and its earthy, spicy character.
From the vineyard to the winery to the glass, each varietal has its own virtues and nuances, and there’s no better way to learn about them than through firsthand tasting. In this series of interactive, geeky, “research”-intensive courses, held in our cozy barrel room, you’ll sip a range of classic expressions and styles of numerous grapes while delving into history, genealogy, geography, and terroir, as well as production methods, aging, flavor profiles, and food pairings.
