Lamb Shanks

With the Holidays fast approaching, time is a precious resource. Entertaining can be a huge task when you are working full-time and balancing an already too long to do list. Enter the Slow Cooker Dinner Party, a simple solution for having the main course done when you arrive home from work and all you have to do is compose a few finishing touches before you serve dinner.

Key to Success: Your recipe should not look or taste like a crock pot recipe. Try this recipe for Lamb Shanks with Lemon, Dill, and Feta. It is delicious, presents beautifully, and is surprisingly affordable. I was able to whip this entire dinner together for 4 people under $50.

How to Throw Your Crock Pot Dinner Party:

NIGHT BEFORE: Set the table. Keep decorations simple. I laid out some simple linens and a plentiful assortment of candles. Don’t have a centerpiece? Don’t worry. Your friends and family are coming to see you, not your flower arrangements.

Prep everything to go in the crock pot (except the lamb) and put it in a Ziploc bag.

Buy a dessert or make a simple one, such as brownies or an easy apple tart (pictured). To make the apple tarts: Cut thawed puff pastry into squares, place apple slices in the center of each square, and brush the whole thing with melted butter. Bake at 350 degrees F for 20-30 minutes. Then top with a sprinkle of raw sugar and finish under the broiler until just caramelized.

DAY OF: Sear the Lamb Shanks, place in crock pot and top with prepped ingredients. Set it and forget it.

When Guests Arrive: Serve drinks. We poured a bottle of the Clos de los Siete Red Blend.

If you’d like, pop a simple appetizer in the oven. This evening, I sliced beefsteak tomatoes and drizzled them with extra virgin olive oil, seasoned them with salt, pepper, and oregano and laid thick slices of feta on top. Broil until the tomatoes are warmed through and the cheese is beginning to turn golden. Finish with a sprinkle of oregano or basil and serve immediately.

30 minutes Before Serving Dinner:

Boil a pot of water and cook 1lb orzo until al dente.

Finish the sauce, per recipe instructions. Then Plate, Serve, and Enjoy!
